First Fry: Drain the potatoes thoroughly and pat them completely dry with paper towels. Heat peanut oil in a deep-fryer or large, heavy-bottomed saucepan to 275 degrees F (135 degrees C). Gently lower about 1/4 of the potatoes into the hot oil, ensuring not to overcrowd the fryer. Cook for 2 minutes, stirring occasionally to prevent sticking. Remove the fries with a slotted spoon and place them on a clean wire rack or paper towel-lined baking sheet. Repeat with the remaining potatoes. (15 minutes)
