For an extra layer of flavor, marinate the shrimp in a little lemon juice, garlic, and herbs for 30 minutes before wrapping them in pancetta. If you don't have a grill, you can also pan-fry the shrimp in a skillet over medium heat. Adjust the amount of chipotle pepper to your spice preference. For a milder vinaigrette, use half a pepper or remove the seeds. Make the cilantro oil and chipotle vinaigrette ahead of time and store them in the refrigerator. They will keep for up to 3 days. Serve with a side of grilled vegetables or a light salad for a complete meal.
