Follow The Directions

01

Step
10 mins

In a large saucepan, melt the butter over medium heat until it foams slightly. Add the celery, green onion, and red bell pepper. Cook, stirring occasionally, until the vegetables are softened but not browned, about 10 minutes.

02

Step
5 mins

Gently stir in the half-and-half and parsley. Season with salt and freshly ground black pepper to taste. Heat the mixture until it just begins to simmer, being careful not to boil.

03

Step
15 mins

Add the undrained oysters and hot sauce. Bring the stew to a gentle simmer and cook until the edges of the oysters begin to curl, approximately 10 to 15 minutes.

04

Step
5 mins

Remove the stew from the heat and let it rest for about 5 minutes before serving to allow the flavors to meld.

For a richer flavor, use heavy cream instead of half-and-half.
Fresh parsley can be used in place of dried. Use 1 tablespoon of fresh, chopped parsley.
Adjust the amount of hot sauce to your preference. A dash of sherry or brandy can also be added for depth of flavor.
Serve immediately after resting. Garnish with oyster crackers or a sprinkle of fresh parsley, if desired.
