Overcrowding will steam the vegetables instead of roasting them. If necessary, use two baking sheets. Adjust roasting time based on your oven and the size of the vegetable pieces. Vegetables are done when they are easily pierced with a fork. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
