In a heavy-bottomed pot or Dutch oven, heat over medium heat. Add ground beef and diced onion. Cook, breaking up the beef with a spoon, until browned and the onion is softened, about 5 minutes. Drain off any excess grease.

Add the beef broth, pinto beans, diced tomatoes (undrained), frozen corn, and taco-flavored rice and seasoning blend to the pot. Stir in the buttery spread. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 7 minutes, or until the rice is tender and the flavors have melded.

Remove the pot from the heat and let it stand, covered, for at least 2 minutes to allow the chili to thicken slightly. Stir well before serving.

For a spicier chili, add a pinch of cayenne pepper or a diced jalapeño along with the onion.
Feel free to customize your toppings! Consider adding chopped cilantro, avocado, or a squeeze of lime juice.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
