In a large, deep skillet or Dutch oven, heat over medium-high heat. Add the ground beef and chopped onion. Cook, breaking up the beef with a spoon, until browned and crumbly. (5-7 minutes). Drain off any excess grease.

Pour in the water or beef broth and stir in the spaghetti sauce. Bring the mixture to a boil. (about 5 minutes).

Add the rotini pasta, ensuring it's mostly submerged in the sauce. Cover the skillet, reduce the heat to low, and simmer for 15 minutes, stirring occasionally to prevent sticking.

Stir in the chopped red bell peppers and sliced mushrooms. Cover and cook for an additional 5 minutes, or until the vegetables are tender and the pasta is cooked through.

Remove from heat. Sprinkle generously with shredded mozzarella cheese and season with salt and pepper to taste.

Allow the cheese to melt for a minute or two before serving. Garnish with fresh basil or parsley, if desired.

For a richer flavor, use beef broth instead of water.
Add a pinch of red pepper flakes for a little heat.
Experiment with different types of vegetables, such as zucchini or spinach.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
