Add the crushed tomatoes, sea salt, and freshly ground black pepper. Reduce heat to medium-low, cover, and simmer until the octopus is tender and the sauce has thickened (about 25 minutes).

The key to tender octopus is slow cooking. Don't be tempted to add water; the octopus will release its own flavorful juices.
