For a nut-free option, substitute the peanut butter with sunflower seed butter or tahini. Feel free to experiment with different mix-ins! Dried cranberries, chopped nuts, shredded coconut, or chia seeds would all be delicious additions. For a vegan version, substitute the honey with maple syrup or agave nectar. Store the energy bites in an airtight container in the refrigerator for up to a week, or in the freezer for longer storage. They taste especially good straight from the freezer! If the mixture is too dry, add a teaspoon of honey or water at a time until it reaches the desired consistency. If it's too wet, add a tablespoon of rolled oats or flax seed.
