For a vegetarian version, omit the bacon and use olive oil to sauté the vegetables. You can also add a smoked paprika to mimic the smoky flavor of bacon. If you don't have Swiss chard, you can substitute kale or spinach. For a richer flavor, use homemade chicken broth. This soup is even better the next day! Flavors meld together beautifully overnight.
