Step

In a soup pot over medium heat, render the bacon until crisp, about 5 minutes. Drain off all but 1 tablespoon of drippings. Add onion, celery, and salt, and sauté until softened and translucent, 5-7 minutes.

Stir in tomato paste, black pepper, dried oregano, dried thyme, and cayenne pepper. Cook until the tomato paste caramelizes, about 2 minutes. Add garlic; cook for 1-2 minutes. Stir in chicken broth and water; bring to a simmer.

Prep the Swiss chard by removing the leaves from the stems (discard stems). Wash the leaves thoroughly and drain.

Add Swiss chard to the pot; simmer until tender, about 10 minutes. Season with salt.

Stir in beans; increase heat to high and bring to a boil. Stir in pasta; reduce heat to medium-high. Cook until pasta is tender, 12-15 minutes, stirring occasionally.

Taste and adjust seasonings. Serve topped with Parmigiano-Reggiano cheese, a drizzle of olive oil, and red pepper flakes.

For a vegetarian version, omit the bacon and use olive oil to sauté the vegetables. You can also add a smoked paprika to mimic the smoky flavor of bacon.
If you don't have Swiss chard, you can substitute kale or spinach.
For a richer flavor, use homemade chicken broth.
This soup is even better the next day! Flavors meld together beautifully overnight.
