Step

In a medium saucepan, whisk together the granulated sugar, cornstarch, and sea salt. (2 minutes)

Gradually stir in the water and fresh lemon juice until a smooth slurry forms. Gently fold in the fresh blueberries. (3 minutes)

Place the saucepan over medium-low heat, stirring occasionally. Cook until the sauce thickens and begins to bubble, approximately 8-10 minutes.

Remove from heat and stir in the pure vanilla extract. (1 minute)

For a smoother sauce, gently mash some of the blueberries with the back of a spoon while cooking.
If you prefer a thicker sauce, dissolve an additional 1/2 teaspoon of cornstarch in 1 tablespoon of cold water and stir it into the sauce during the last few minutes of cooking.
Store leftover sauce in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
