Follow The Directions

01

Step

Prepare the Crepe Batter: In a blender, combine milk, flour, eggs, and salt. Blend until smooth. Let the batter rest for at least 30 minutes. (Prep time: 5 minutes, Rest time: 30 minutes)

02

Step

Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking pan with butter. (Prep time: 5 minutes)

03

Step

Cook the Crepes: Melt a small amount of butter in a medium-sized skillet over medium heat. Pour 2 tablespoons of batter into the hot skillet, immediately rotating the pan to spread the batter into a thin, even layer. Cook for 1-2 minutes, until the top is no longer wet and the bottom is lightly browned. Use a spatula to loosen the edges, flip the crepe, and cook for about 1 minute more. Transfer to a plate and repeat with the remaining batter, stacking the crepes as you go. (Cook time: 2-3 minutes per crepe)

04

Step

Sauté the Filling: Heat another skillet over medium-high heat. Add mushrooms and onion and sauté until softened and lightly browned, about 5 minutes. Add the minced garlic and sauté until fragrant, about 30 seconds. (Cook time: 5-6 minutes)

05

Step

Create the Cheese Mixture: Stir in ricotta cheese and cream cheese into the mushroom mixture until melted and well combined, about 2-3 minutes. (Cook time: 2-3 minutes)

06

Step

Combine Filling and Chicken: Stir in the chopped chicken, season with salt and pepper to taste, and heat through. (Cook time: 2 minutes)

07

Step

Assemble the Crepe Packets: Spread a heaping tablespoon of Parmesan cheese in the center of each crepe. Spoon about 1/4 cup of the chicken-mushroom mixture onto the cheese. Fold in the sides of the crepe to form a packet. Place the filled crepes, folded-side-down, in the prepared baking pan. (Assembly time: 15 minutes)

08

Step

Bake: Bake in the preheated oven until the crepes are golden brown and the filling is bubbly, about 15 minutes. (Bake time: 15 minutes)

09

Step

Prepare the Gravy: While the crepes are baking, melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute to form a roux. Gradually pour in chicken broth, whisking constantly to avoid lumps. Cook until the gravy has thickened slightly, about 5-7 minutes. Stir in the chopped parsley. (Cook time: 7-8 minutes)

10

Step

Serve: Remove the crepe packets from the oven and spoon the gravy generously over the top. Serve immediately.

For a richer flavor, try using a mix of wild mushrooms.
Feel free to add other vegetables to the filling, such as spinach or bell peppers.
The crepes can be made ahead of time and stored in the refrigerator for up to 2 days. Be sure to bring them to room temperature before filling.
If you don’t have rotisserie chicken, you can use leftover roasted chicken or poached chicken breasts.
For a vegetarian option, omit the chicken and add more mushrooms or other vegetables.
