Place the chicken cubes in a large resealable plastic bag. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag tightly, removing any excess air, and refrigerate for at least 5 hours, or preferably overnight, to allow the flavors to fully penetrate. (5 hours+)

To prepare the cooling yogurt sauce, whisk together the Greek yogurt, 1/2 cup lemon juice, 1/4 cup mint, 2 cloves garlic, lemon zest, and 1 teaspoon salt in a bowl. Cover and refrigerate until ready to serve. (5 minutes)

Toss the green bell peppers and red onion wedges in the reserved 1/4 cup of marinade. This will infuse them with flavor and help them caramelize beautifully on the grill. (3 minutes)

Remove the chicken from the marinade (discard the used marinade). Thread the chicken, peppers, and onion alternately onto the soaked bamboo skewers. Ensure the skewers are not overcrowded for even cooking. (10 minutes)

Preheat an outdoor grill to medium-high heat and lightly oil the grate to prevent sticking. Arrange the skewers on the grill, leaving some space between them. Close the lid and cook, turning once or twice, until the chicken is firm to the touch and cooked through, approximately 8 to 10 minutes. (15 minutes)

Remove the skewers from the grill and let them rest for 2 to 3 minutes before serving. This allows the juices to redistribute, resulting in more tender and flavorful chicken. Serve immediately with the chilled yogurt sauce. (3 minutes)

For an extra smoky flavor, consider using wood chips (such as hickory or mesquite) with your grill.
If you don't have access to an outdoor grill, these skewers can also be cooked under a broiler or in a grill pan on the stovetop.
