This Butter Bean Soup is a creamy, comforting embrace in a bowl. A quicker, stovetop rendition of a classic slow-cooked favorite, it's endlessly adaptable – enrich it with ham for a heartier meal or keep it vegetarian with vegetable broth. For a rustic touch, simply crush some of the beans to thicken the velvety texture.

Follow The Directions

01

Step

In a large stock pot or Dutch oven, heat the olive oil over medium-high heat. (2 minutes)

02

Step

Add the onion, carrot, and celery and cook, stirring occasionally, until the onion becomes translucent and softened, about 5 minutes.

03

Step

Add the minced garlic, dried marjoram, parsley flakes, and thyme. Cook, stirring constantly, until fragrant, about 1-2 minutes.

04

Step

Pour in the chicken broth, then stir in the drained butter beans, white vinegar, salt, and pepper. Bring the mixture to a boil.(3 minutes)

05

Step

Reduce the heat to low, cover, and simmer gently for 30 minutes, allowing the flavors to meld together beautifully. (30 minutes)

06

Step

Before serving, use a large spoon or an immersion blender to crush some of the beans for a thicker, creamier consistency (optional).

07

Step

Ladle the soup into bowls and serve hot. Enjoy!

For a richer flavor, sauté a few slices of bacon or pancetta in the pot before adding the vegetables.
A bay leaf added during simmering will deepen the savory notes.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The soup may thicken upon cooling; add a splash of broth or water when reheating to reach your desired consistency.
Feel free to experiment with other herbs and spices, such as rosemary, sage, or a pinch of red pepper flakes.
