Render the Bacon: In a skillet over medium heat, cook the chopped bacon, stirring occasionally, until crisp and golden brown (approx. 8-10 minutes). Remove the bacon with a slotted spoon and set aside, reserving 1-2 tablespoons of the rendered bacon fat in the skillet, depending on your preference.

Boil the Rutabaga: Bring a large pot of salted water to a rolling boil. Add the diced rutabagas and cook until they are very tender and easily pierced with a fork (approx. 15-20 minutes).

Mash and Combine: Drain the cooked rutabagas thoroughly and return them to the pot. Add the reserved bacon fat and butter. Using an electric mixer or a potato masher, blend the rutabagas until smooth and creamy. Season generously with salt and freshly ground black pepper to taste.

Fold in the Bacon: Gently fold in the crispy bacon crumbles into the mashed rutabaga mixture, reserving a small amount for garnish, if desired. Serve immediately.

For an even smoother mash, consider using a food mill or ricer after boiling the rutabagas.
A touch of maple syrup or brown sugar can add a hint of sweetness to balance the savory flavors.
Try adding a clove of minced garlic to the skillet while rendering the bacon for extra flavor.
For a richer flavor, use brown butter.
