If the sauce becomes too thick, add a little of the reserved pasta water to reach desired consistency.

For a vegetarian option, substitute the chicken with chickpeas or roasted vegetables like cauliflower or butternut squash.
Adjust the amount of curry powder to your preference. Start with 2 tablespoons for a milder flavor and add more to taste.
A splash of lemon juice at the end can brighten up the sauce.
