First, procure and prepare your ingredients with care. (5 minutes)

In a large, heavy-bottomed skillet or Dutch oven, melt the butter over medium heat. (2 minutes)

Add the chopped onion and celery to the melted butter. Cook, stirring occasionally, until the vegetables are softened and translucent, about 8-10 minutes. (10 minutes)

In a very large bowl, combine the dried bread cubes, salt, poultry seasoning, black pepper, thyme, and sage. Toss to evenly distribute the seasonings. (5 minutes)

Pour the cooked onion and celery mixture over the bread cube mixture. Toss gently to combine. (3 minutes)

Gradually add the chicken broth, tossing gently after each addition, until the bread cubes are evenly moistened but not soggy. You may not need all of the broth. (5 minutes)

Allow the stuffing to cool completely to room temperature. (30 minutes)

Transfer the cooled stuffing to large, resealable bags or airtight containers. Refrigerate for up to 3 days.

For a richer flavor, use homemade chicken broth.
Feel free to add other vegetables such as mushrooms or carrots.
If baking the stuffing, add an extra 1/2 cup of chicken broth before baking to prevent it from drying out.
For a vegetarian version, substitute vegetable broth for the chicken broth.
