Follow The Directions

01

Step

Preheat oven to 350°F (175°C). Grease and lightly flour two 8x4 inch loaf pans. (5 minutes)

02

Step

Prepare the pecan-vanilla wafer topping: In a medium bowl, combine the melted butter, 1/3 cup sugar, crushed vanilla wafers, and chopped pecans. Mix thoroughly until evenly moistened. Press the mixture firmly into the bottom of the prepared loaf pans. (10 minutes)

03

Step

In a large bowl, cream together the softened butter and remaining 2 cups of sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. (10 minutes)

04

Step

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Beat until just combined; do not overmix. (8 minutes)

05

Step

Divide the batter evenly between the prepared loaf pans, spreading it gently over the pecan-vanilla wafer topping. (2 minutes)

06

Step

Bake in the preheated oven for 55-60 minutes, or until a wooden skewer inserted into the center comes out clean. (60 minutes)

07

Step

Remove the loaves from the oven and let them cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely. (10 minutes)

For a richer flavor, use brown butter for the topping.
Toast the pecans lightly before chopping to enhance their nutty flavor.
Ensure the butter is properly softened for a smoother batter.
To prevent the topping from burning, tent the loaves with foil during the last 15 minutes of baking if necessary.
