Simmer gently until the greens are very tender and the peanut butter begins to separate, creating a rich, flavorful sauce. (Approximately 1 1/2 hours). Add more water if the mixture becomes too dry.

Gently stir in the flounder fillets. Continue to cook, stirring frequently, until the fish breaks down and integrates into the greens, further enriching the flavor. (Approximately 30 minutes)

For the most authentic flavor, seek out Liberian or West African soul food seasoning blends, often available online or in specialty markets.
Adjust the amount of peanut butter to your liking. For a more pronounced peanut flavor, add an extra tablespoon or two.
The longer these greens simmer, the more the flavors will meld together. Don't be afraid to let them cook for an extended period – they only get better!
Feel free to substitute other types of fish, such as tilapia or cod, for the flounder.
If you don't have liquid smoke, a dash of smoked paprika can provide a similar smoky note.
