Follow The Directions

01

Step

Preheat oven to 350°F (175°C). (5 minutes)

02

Step

In a medium bowl, whisk together the egg yolks until smooth. (2 minutes)

03

Step

In a large bowl, whisk together the sugar, flour, and salt. Gradually whisk in the egg yolks, milk, lemon zest, and lemon juice until well combined and smooth. (5 minutes)

04

Step

In a separate clean, dry bowl, beat egg whites until stiff peaks form. (5 minutes)

05

Step

Gently fold the beaten egg whites into the lemon mixture in two additions, being careful not to deflate the whites. (3 minutes)

06

Step

Pour the mixture into a 1-quart baking dish. (1 minute)

07

Step

Place the baking dish inside a larger baking pan. Carefully pour hot water into the larger pan until it reaches about 1 inch up the sides of the baking dish to create a water bath. (3 minutes)

08

Step

Bake in the preheated oven for approximately 50 minutes, or until the dessert is set and lightly golden on top. A toothpick inserted into the center should come out clean. (50 minutes)

09

Step

Remove from the oven and let cool slightly before serving. Serve warm or chilled.

For a richer flavor, use whole milk instead of skim milk.
To prevent curdling, ensure the milk is at room temperature before adding it to the other ingredients.
Baking in a water bath ensures even cooking and prevents the dessert from cracking.
For individual servings, bake in ramekins for approximately 30-40 minutes, or until set.

The lemon flavor is perfect – not too tart, not too sweet.
