These vibrant potatoes, kissed with bright lemon and savory garlic, transform humble ingredients into a side dish that's anything but ordinary. A guaranteed crowd-pleaser, perfect alongside grilled meats or roasted vegetables.
Scrub the new potatoes thoroughly and quarter them (or halve if very small). Place in a large saucepan and cover generously with cold water; bring to a rolling boil. Cover partially and cook until fork-tender, about 12 minutes.
Drain the potatoes well and set aside to allow excess moisture to evaporate. (2 minutes)
Heat the olive oil in the same saucepan over medium-high heat until shimmering. Add the potatoes and cook, turning occasionally, until golden brown and slightly crispy, about 5 minutes. Be careful not to overcrowd the pan; cook in batches if necessary.
Add the minced garlic and cook until fragrant, about 30 seconds. Be careful not to burn the garlic, as it will become bitter.
