Heat olive oil in a large stockpot over medium heat. Add celery, carrots, onion, and garlic; cook and stir until slightly softened and fragrant. (Approximately 5 minutes)

Add turkey carcass, salt, bay leaves, peppercorns, rosemary, and sage; continue to cook until the herbs release their aroma. (Approximately 5 minutes)

Pour in enough water to fully submerge the turkey carcass and vegetables; bring the mixture to a boil, then reduce the heat to low, cover, and simmer gently, skimming off any fat that rises to the surface. (4 to 5 hours)

Carefully strain the stock through a fine-mesh sieve into a clean container. Discard the solids, reserving only the flavorful liquid.

For an even richer flavor, roast the turkey carcass in a 350°F (175°C) oven for 30 minutes before adding it to the stockpot.
Feel free to add other vegetables, such as parsnips or leeks, for added depth of flavor.
This stock can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
