For a more intense flavor, lightly toast the whole spices (peppercorns, cumin seeds, coriander seeds, cloves, nutmeg, cinnamon sticks, and cardamom pods) before grinding them. Be careful not to burn them. Allow to cool completely before grinding. This spice blend is also fantastic in baked goods like spiced cakes or cookies. Start with a small amount and adjust to taste. Experiment with different ratios to create your own signature blend. Some variations include adding a pinch of cayenne pepper for heat or a touch of allspice for sweetness.
