Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). Generously coat an 8-inch square baking pan with cooking spray. (5 minutes)

02

Step

In a large bowl, whisk together the beaten eggs, shredded Cheddar cheese, cottage cheese, all-purpose flour, melted butter, baking powder, and salt until well combined. Ensure there are no lumps for a smooth and even texture. (5 minutes)

03

Step

Pour the mixture into the prepared baking dish, spreading evenly. (2 minutes)

04

Step

Bake in the preheated oven until the casserole is golden brown and a knife inserted into the center comes out clean, approximately 25 minutes. (25 minutes)

05

Step

Allow the casserole to cool for 5 minutes before serving. This allows it to set slightly and makes it easier to cut. Drizzle with your favorite hot sauce for a touch of heat. (5 minutes)

For a richer flavor, use Gruyere or Fontina cheese in place of, or in addition to, the Cheddar.
Add a handful of chopped vegetables, such as bell peppers, onions, or spinach, for added nutrients and flavor.
Cooked and crumbled sausage or bacon can be added to the egg mixture for a heartier casserole.
If you don't have small-curd cottage cheese, ricotta cheese works as a great substitute.
Adjust the amount of hot sauce to your preference. A dash of black pepper can also be added for extra spice.
Store leftovers in the refrigerator for up to 3 days. Reheat in the microwave or oven.

I found that 25 minutes was a little too long in my oven, so I'd recommend checking it after 20 minutes.
