Follow The Directions

01

Step
5 mins

In a large bowl, sift together the flour, salt, and baking soda. (5 minutes)

02

Step
3 mins

Gradually whisk in the chilled buttermilk and egg yolks until the batter is smooth and free of lumps. (3 minutes)

03

Step
7 mins

In a separate clean, dry glass or metal bowl, whip the egg whites until soft peaks form. Be careful not to over-whip. (7 minutes)

04

Step
5 mins

Gently fold the whipped egg whites into the batter in two additions, being careful not to deflate the whites. The batter should be light and airy. (5 minutes)

05

Step
2 mins

Place an Aebleskiver pan over medium heat. Grease each cup generously with cooking spray or melted butter. (2 minutes)

06

Step
2 mins

Pour the batter into each prepared cup, filling them about 2/3 full. (2 minutes)

07

Step
2 mins

Cook until the bottoms are golden brown and a slight crust has formed, about 1-2 minutes. Use a toothpick or skewer to gently turn the Aebleskiver 90 degrees. (2 minutes)

08

Step
5 mins

Continue cooking and turning until the Aebleskiver are cooked through and golden brown on all sides, another 1-2 minutes per side. (5 minutes)

09

Step

Remove from the pan and serve immediately. Dust with confectioners' sugar and serve with maple syrup or your favorite jam.

For extra flavor, try adding a pinch of cardamom or a teaspoon of vanilla extract to the batter.
Aebleskiver are best served immediately while they are still warm and fluffy.
If you don't have an Aebleskiver pan, you can use a regular skillet to make small, thick pancakes.
Buttermilk adds a unique tanginess. If you don't have it, add 1 tablespoon of lemon juice or white vinegar to regular milk and let it sit for 5 minutes before using.
Don't overmix the batter after folding in the egg whites; a few lumps are okay.
Serve these with a variety of toppings, such as fresh berries, whipped cream, or even Nutella.
