In a large bowl, whisk together the eggs, sugar, vegetable oil, and vanilla extract using an electric mixer on medium speed until well combined. (5 minutes)

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing by hand with a large spoon until a dough forms. (5 minutes)

Turn the dough out onto a lightly floured surface and knead for about 5 minutes until it becomes soft and elastic. Cover the dough with a clean kitchen towel and let it rest at room temperature for 15-20 minutes. (25 minutes)

Break off small pieces of dough (about 1 tablespoon each) and roll them into small ropes, approximately 4 inches long and 1/4 inch wide. Twist the ropes into loose knots or braids.

For a richer flavor, try using melted butter instead of vegetable oil.

These cookies can be stored in an airtight container at room temperature for up to 3 days.
