Follow The Directions

01

Step
10 hrs

Bring a large pot of lightly salted water to a rolling boil. Add cavatelli and cook, stirring occasionally, until al dente, approximately 9-11 minutes. Drain thoroughly, reserving about 1/2 cup of the pasta water.

02

Step
8 hrs 30 mins

In the same pot, bring salted water to a boil again. Blanch the chopped broccoli rabe until tender-crisp, about 7-10 minutes. Drain well.

03

Step
7 hrs

In a large skillet, melt butter with olive oil over medium heat. Add Italian sausage and diced onion, cooking until sausage is browned and onion is translucent, around 5-7 minutes. Stir in cooked broccoli rabe, roasted red peppers, and chopped garlic. Sauté for another 5 minutes to meld the flavors.

04

Step
4 hrs

In a small bowl, dissolve concentrated chicken stock in white wine and water. Whisk in cornstarch until smooth. Pour this mixture into the skillet with the sausage and vegetables. Season with salt and freshly ground black pepper to taste. Bring to a gentle simmer, allowing the sauce to thicken slightly, about 3-5 minutes. Remove from heat.

05

Step
1 hrs

Gently toss the cooked cavatelli with the sauce. Add a splash of the reserved pasta water if needed to achieve desired consistency. Sprinkle generously with grated Parmesan cheese. Toss lightly to combine and serve immediately.

For a richer flavor, use homemade chicken stock instead of concentrated bouillon.
If you prefer a milder flavor, remove the seeds from the roasted red peppers before slicing.
A pinch of red pepper flakes adds a delightful kick to this dish.
Gnocchi can indeed be substituted for cavatelli; adjust cooking time accordingly.
Don't overcook the broccoli rabe; it should retain a slight bite.
Freshly grated Parmesan cheese is highly recommended for the best flavor and texture.
