Soak beans in cold water for at least 8 hours, or preferably overnight.

Drain beans and set aside.

Remove sausage casings by making a shallow lengthwise cut down each link. In a dry soup pot over medium-high heat, brown the sausage, breaking it up with a wooden spoon, for 5-7 minutes. Continue cooking until the rendered juices begin to caramelize and stick to the pot's bottom, creating a flavorful fond, about 3-5 minutes.

Add the chopped onion to the pot, stirring to coat it in the sausage drippings. Cook until the onion softens and becomes translucent, approximately 5 minutes. Deglaze the pot by adding the white wine, scraping up all the browned bits from the bottom with your wooden spoon. Season with black pepper, the bay leaf, and 1/4 teaspoon of red pepper flakes. Stir in the water.

Introduce the soaked and drained cannellini beans to the pot. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and simmer for 30 minutes. Season with 1 teaspoon of salt, then continue simmering until the beans are fully tender, about 30 minutes more. Taste the beans to ensure they are perfectly cooked.

For a creamier texture, mash approximately 1/4 of the beans with a potato masher. Stir in the chopped kale, increase the heat to medium, and cook until the kale is tender, about 10-15 minutes. Taste and adjust seasonings as needed.

When serving, drizzle each portion with extra-virgin olive oil and sprinkle with grated Parmigiano-Reggiano cheese and a pinch of red pepper flakes.

For a vegetarian version, omit the sausage and add 1 teaspoon of smoked paprika to enhance the smoky flavor.
Consider using chicken or vegetable broth instead of water for a richer taste.
If you don't have kale, spinach or Swiss chard are excellent substitutes.
Adjust the amount of red pepper flakes to your preferred level of spiciness.
