Step

Turn on a multi-functional pressure cooker (such as Instant Pot®) and select the 'Sauté' function. Add 1 tablespoon of olive oil and allow it to heat for 1 minute. Add the chopped red onion, sliced carrots, and celery. Cook, stirring occasionally, until the onions are translucent and the carrots are slightly softened, about 3 minutes. Add the minced garlic and cook for 30 seconds, until fragrant. Cancel the 'Sauté' function.

Pour in the vegetable broth, rinsed lentils, white wine, oregano, and thyme. Stir well to combine. Close and lock the lid of the Instant Pot®. Select the 'Pressure Cook' or 'Manual' function and set the timer for 10 minutes on high pressure. Allow approximately 10 minutes for the pressure to build inside the pot.

While the lentils are cooking, prepare the Dijon vinaigrette. In a small bowl, whisk together 1/4 cup olive oil, red wine vinegar, and Dijon mustard until emulsified. Season with salt and freshly ground black pepper to taste.

Once the cooking time is complete, allow the pressure to release naturally for 10 minutes. After 10 minutes, carefully release any remaining pressure manually according to the manufacturer's instructions. Remove the lid and stir in the prepared Dijon vinaigrette. Garnish with fresh parsley, if desired. Serve warm.

For a richer flavor, try using chicken broth instead of vegetable broth.
If you don't have white wine, you can substitute with an equal amount of additional vegetable broth or water.
Adjust the amount of Dijon mustard to your preference for tanginess.
This salad is also delicious served cold.
