Follow The Directions

01

Step

Engage the Saute function on your 6- or 8-quart multi-functional pressure cooker (e.g., Instant Pot®). Once the pot is heated, introduce the olive oil and allow it to shimmer, approximately 2 minutes. Incorporate the diced onion, sliced carrots, celery, mushrooms, salt, and pepper. Saute until the vegetables soften, about 5 minutes. Infuse the mixture with minced garlic and saute until its aroma fills your kitchen, roughly 1 minute.

02

Step

Introduce the turkey broth, chopped cooked turkey, kale, diced tomatoes with their juice, Italian seasoning, and bay leaf. Stir thoroughly to ensure even distribution of flavors.

03

Step

Secure the lid and lock it in place. Select high pressure according to the manufacturer's guidelines and set the timer for 15 minutes. Allow 10 to 15 minutes for the pressure to build within the pot.

04

Step

Employ the natural-release method for approximately 15 minutes, following the manufacturer's instructions. Then, carefully release any remaining pressure using the quick-release method, about 5 minutes. Unlock and remove the lid.

05

Step

While the pressure is releasing, bring a large pot of lightly salted water to a vigorous boil. Add the rotini pasta and cook until al dente, about 8 minutes. Drain thoroughly.

06

Step

Ladle the cooked pasta into individual bowls and generously top with the flavorful turkey, broth, and vegetable mixture. Serve immediately and savor the comforting flavors.

For an even deeper flavor, consider using homemade turkey broth. It will elevate the soup to a new level of deliciousness.
Feel free to customize the vegetables based on your preferences and what you have on hand. Zucchini, bell peppers, or spinach would be excellent additions.
If you prefer a thicker soup, you can blend a portion of the soup using an immersion blender before adding the pasta.
