Follow The Directions

01

Step

Combine Ingredients: In the Instant Pot, add the chicken broth, frozen hash brown potatoes, diced tomatoes (with their juice), frozen mixed vegetables, celery (if using), Worcestershire sauce, smoked paprika, oregano, onion powder, salt, dill, and pepper. Stir well to combine. (2 minutes)

02

Step

Pressure Cook: Secure the Instant Pot lid, ensuring the valve is set to sealing. Select the 'Manual' or 'Pressure Cook' setting on high pressure and set the timer for 0 minutes. (30 minutes)

03

Step

Release Pressure: Once the cooking cycle is complete, allow the Instant Pot to naturally release pressure for 5 minutes, then carefully perform a quick release according to the manufacturer's instructions. (5 minutes)

04

Step

Serve: Ladle the hot soup into bowls and serve immediately. Enjoy!

For a richer flavor, sauté a diced onion and 2 cloves of minced garlic in a tablespoon of olive oil in the Instant Pot before adding the remaining ingredients.
If you prefer a smoother soup, use an immersion blender to partially blend the soup after cooking.
Add a can of drained and rinsed cannellini beans or great northern beans for extra protein and heartiness.
Garnish with fresh parsley or a dollop of sour cream or Greek yogurt before serving.

I added some Italian seasoning and a bay leaf for extra flavor. It was a hit with the whole family!

I was skeptical about the 0-minute cook time, but it worked perfectly! The potatoes were tender, and the soup was delicious.
