If you prefer a softer chickpea, increase the cooking time by 5-10 minutes.
Salt can inhibit the cooking process of beans. It's best to add salt after the chickpeas are cooked.
The reserved cooking liquid (aquafaba) can be chilled and used as an egg replacement in vegan baking recipes.
