Follow The Directions

01

Step
0 mins

Spray the inside of a multi-functional pressure cooker (such as Instant Pot®) with cooking spray. Pour in half the chicken broth. Add chicken breasts; sprinkle with taco seasoning. Add beans, corn, salsa, and rice. (5 minutes)

02

Step
37 mins

Pour remaining broth into the pot, making sure rice is submerged. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 22 minutes. Allow 10 to 15 minutes for pressure to build. (37 minutes)

03

Step
12 mins

Release pressure using the natural-release method according to manufacturer's instructions, about 12 minutes. (12 minutes)

04

Step
5 mins

Carefully pull out chicken breasts; let rest on a cutting board. Fluff rice lightly to keep it from clumping together and cover with lid for 5 minutes more. Shred chicken with 2 forks in the meantime. (10 minutes)

05

Step
0 mins

Serve rice in bowls topped with shredded chicken. (5 minutes)

Feel free to customize your taco bowls with your favorite toppings such as sour cream, shredded cheese, green onions, cilantro, or guacamole.
For a spicier kick, use a hot salsa or add a pinch of cayenne pepper to the taco seasoning.
To prevent the rice from sticking to the bottom of the pot, ensure it is fully submerged in the broth.
If you don't have ranch-style beans, black beans or pinto beans can be substituted.
This recipe can easily be doubled or tripled for meal prepping or feeding a crowd.
Adjust the natural pressure release time based on your Instant Pot model; some models may require more or less time.
