Remove from oven and add the cremini mushrooms, chopped onion, honey, rosemary, thyme, sage, mustard powder, garlic powder, salt, and black pepper to the potatoes. Stir well to combine, ensuring the mushrooms and onions are evenly coated with the honey-herb mixture. (5 minutes)

Return baking dish to oven and bake until mushrooms and potatoes are tender and golden brown, about 15-20 more minutes. Stir halfway through to ensure even cooking. (20 minutes)

For a deeper flavor, try using a mix of mushroom varieties such as shiitake, oyster, and maitake.
If you don't have dried herbs on hand, you can substitute fresh herbs. Use about 1 tablespoon of fresh rosemary and 1 1/2 teaspoons of fresh thyme, finely chopped.
A drizzle of balsamic glaze after roasting adds a tangy sweetness that complements the earthy flavors beautifully.
Adjust honey and seasonings to taste.
