Prepare an Ice Bath: Fill a large bowl with ice and water; set aside. (5 minutes)

Blanch the Tomatoes: Bring a large pot of water to a rolling boil. Score the bottom of each tomato with a shallow 'X' to aid peeling. Gently lower the tomatoes into the boiling water for 30-60 seconds, or until the skins begin to loosen. (2 minutes)

Peel and Quarter: Immediately transfer the blanched tomatoes to the prepared ice bath for 5 minutes to stop the cooking process. Remove from the ice bath, peel off the skins, and quarter each tomato. (10 minutes)

Simmer to Perfection: Transfer the quartered tomatoes to a large saucepan set over low heat. Stir in the sea salt. Simmer gently, stirring occasionally to prevent sticking, until the tomatoes have softened and the sauce has slightly thickened, about 20-30 minutes. (30 minutes)

For a richer flavor, add a tablespoon of olive oil to the saucepan before simmering.
Experiment with herbs! Fresh basil, oregano, or thyme add a delightful aromatic dimension.
Adjust the salt to your preference, keeping in mind that the flavor will concentrate as the tomatoes simmer.
Stewed tomatoes can be stored in the refrigerator for up to 3 days or frozen for longer storage.
