In a large Dutch oven or heavy-bottomed pot, combine the water, ham hock, linguica sausage, and minced onion. Bring to a vigorous boil over high heat. (5 minutes)

Once boiling, reduce the heat to medium-low, cover the pot, and gently simmer for 1 hour, allowing the flavors to meld and deepen. (60 minutes)

Carefully remove the ham hock from the pot. Once it's cool enough to handle, shred the meat, discarding the skin and bones. Return the shredded ham to the soup. (10 minutes)

Stir in the cubed potatoes, chopped celery, carrots, stewed tomatoes, tomato sauce, and minced garlic. Ensure all ingredients are well combined. Cover the pot and continue to simmer for 1 ½ hours, stirring occasionally to prevent sticking. (90 minutes)

Add the kidney beans and thinly sliced cabbage to the soup. Cook until the cabbage is tender and slightly wilted, about 10 minutes. (10 minutes)

For a richer flavor, consider browning the linguica sausage in the pot before adding the other ingredients.
Adjust the amount of water to achieve your desired soup consistency.
If you prefer a smoother soup, you can use an immersion blender to partially puree it before adding the cabbage.
Taste and adjust seasoning as needed. A pinch of smoked paprika can enhance the smoky flavor.
This soup tastes even better the next day, as the flavors continue to develop.
