Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin. (5 minutes)

Mix together warm water and ground flaxseed in a small bowl; let sit for 5 minutes to create a 'flax egg'. (5 minutes)

In a large bowl, combine the mashed bananas, applesauce, grated carrots, vegetable oil, almond milk, brown sugar, and vanilla extract. Mix well. Stir in the water and flaxseed mixture until combined. (5 minutes)

In the same large bowl, add the flour, quick oats, baking powder, cinnamon, nutmeg, baking soda, cloves, and salt. Stir until just mixed – be careful not to overmix. (3 minutes)

Bake in the preheated oven until a wooden skewer inserted into the center comes out clean, about 20 to 30 minutes. (20-30 minutes)

For a nuttier flavor, try using walnut oil instead of vegetable oil.
Feel free to add 1/2 cup of chopped nuts or chocolate chips to the batter for extra indulgence.
These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 2 months.
