For extra soft cookies, don't overbake them. They should still be slightly soft in the center when you take them out of the oven. Feel free to experiment with other spices, such as nutmeg or cardamom. If you don't have white whole wheat flour, you can use all-purpose flour, but the cookies will be slightly less nutritious. For a richer flavor, use brown butter.
