Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the ground beef and chopped onions. Cook, breaking up the beef with a spoon, until the beef is browned and the onions are translucent. (5-7 minutes)

Add the chopped cabbage, carrots, and celery to the pot. Cover and cook, stirring occasionally, until the vegetables begin to soften. (About 10 minutes)

Pour in the water, diced tomatoes, and tomato paste. Add the beef bouillon cubes, vegetable soup mix, brown sugar, Worcestershire sauce, Italian seasoning, garlic powder, and a splash of red wine. Season generously with salt and pepper.

Bring the soup to a boil, then reduce the heat to low. Simmer, uncovered, stirring occasionally, until the flavors have melded and the cabbage is tender. (About 1 hour)

Taste and adjust seasoning as needed, adding more Italian seasoning, salt, or pepper to your preference. Serve hot, with a crusty bread.

For a richer flavor, consider browning the ground beef in a mixture of butter and olive oil.
Adding a bay leaf during simmering can enhance the depth of flavor. Remember to remove it before serving.
This soup tastes even better the next day! Store leftovers in the refrigerator and reheat gently.
Feel free to customize the vegetables according to your preference. Diced potatoes, green beans, or zucchini would also be delicious additions.
