For an even richer flavor, use beef broth in addition to the Guinness. If you don't have fresh thyme, 1 teaspoon of dried thyme can be substituted. Adding a bay leaf during the simmering process will also enhance the depth of flavor. Serve with a side of crusty bread for soaking up the delicious stew.
