Follow The Directions

01

Step
7 mins

In a large saucepan, combine ground turkey, onion, celery, and garlic over medium heat. Sauté until the turkey is cooked through and browned, approximately 5-7 minutes. Drain any excess fat.

02

Step
10 mins

Add chicken broth, fire-roasted tomatoes, tomato paste, Worcestershire sauce, thyme, oregano, bay leaf, salt, and pepper. Reduce heat to medium-low, cover, and simmer for about 10 minutes to allow the flavors to meld.

03

Step
10 mins

Stir in frozen vegetables and rice, then continue to simmer until the vegetables are tender, approximately 10 more minutes. Remove the bay leaf before serving.

For an extra layer of flavor, consider browning the ground turkey with a touch of olive oil and a pinch of red pepper flakes.
Feel free to customize the vegetables to your liking. Diced carrots, zucchini, or bell peppers would be excellent additions.
If you prefer a thicker soup, you can add a slurry of cornstarch and water (1 tablespoon of each) during the last few minutes of cooking.
This soup tastes even better the next day, as the flavors have more time to develop.
