Step

In a large saucepan or Dutch oven, combine curry powder, turmeric, cayenne pepper, smoked paprika, garam masala, and cumin. Stir constantly over low heat until warm and fragrant (3-4 minutes). Be careful not to burn the spices. Add olive oil and stir to combine.

Increase heat to medium and add chopped onion. Cook and stir until softened (3-4 minutes). Add garlic and ginger, stirring for about 2 minutes longer. Pour in chicken stock and season with salt and pepper. Stir to dissolve any spices stuck to the bottom of the pan. Add potatoes and carrots, bring to a boil, then cover.

Reduce heat to a simmer and cook for about 20 minutes, or until potatoes and carrots are tender.

Return heat to medium and add cooked chicken, coconut milk, and green beans. Bring to a gentle boil and cook for 1-2 minutes, stirring to ensure the coconut milk is well blended into the soup. Ladle into bowls and serve warm.

For a richer flavor, use full-fat coconut milk.
Adjust the amount of cayenne pepper to your desired level of spiciness.
Garnish with fresh cilantro or a dollop of plain yogurt for added flavor and visual appeal.
Serve with naan bread or rice for a complete meal.
