Place cucumbers in a colander set over a plate. Toss with 1 teaspoon of salt. Let sit to draw out excess liquid, about 30 minutes. Pat dry with paper towels.

Submerge diced red onion in 1 cup of cold water in a bowl. Let soak to mellow the flavor, 5-10 minutes. Drain and rinse thoroughly.

In a large bowl, combine cucumbers, red onion, Greek yogurt, Kalamata olives, fresh dill, red wine vinegar, lemon juice, minced garlic, lemon zest, dried oregano, and black pepper. Gently fold in the diced cooked chicken, crumbled feta cheese, and diced tomatoes. Cover with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.

Before serving, stir the salad gently. Serve chilled on crisp Bibb lettuce leaves.

For an extra layer of flavor, try grilling the chicken before dicing.
Feel free to substitute other types of lettuce, such as romaine or butter lettuce.
If you don't have Kalamata olives, other brined olives will work.
Add a drizzle of olive oil for extra richness.
