For best results, marinate the chicken for at least 30 minutes, or up to 4 hours, in the refrigerator. This marinade is also excellent for grilled vegetables or tofu. Adjust the amount of lemon juice to your preference for a more or less tangy flavor. Use fresh herbs if available, increasing the quantity to 1 tablespoon of each, finely chopped, for a more intense flavor.
