Follow The Directions

01

Step
12 mins

Prepare the Noodles: Bring a large pot of lightly salted water to a boil. Cook udon noodles according to package directions, typically 10-12 minutes, or until tender but still firm to the bite. Drain and rinse under cool water to stop the cooking process; set aside. (Time: 12 minutes)

02

Step
2 mins

Whisk the Sauce: In a bowl, whisk together the gochujang, 1/4 cup of water, soy sauce, maple syrup, and lime juice until well combined. Set aside. (Time: 2 minutes)

03

Step
2 mins

Sauté the Greens: Heat olive oil in a wok or large skillet over medium-high heat until shimmering. Add the chopped kale, 1/4 cup of the sliced scallions, minced garlic, salt, and pepper. Cook, stirring constantly with tongs, until the kale is just wilted and tender, and the garlic and scallions are fragrant and translucent, about 2 minutes. (Time: 2 minutes)

04

Step
2 mins

Combine and Thicken: Add the gochujang sauce to the sautéed greens and cook, stirring constantly, until the sauce slightly thickens and darkens in color, about 1-2 minutes. (Time: 2 minutes)

05

Step
3 mins

Toss with Noodles: Add the cooked udon noodles to the skillet with the sauce and kale. Cook, tossing continuously, until the noodles are well coated in the sauce and everything is heated through, about 2-3 minutes. Gradually add the remaining 1/4 cup of water, 1 tablespoon at a time, if needed to loosen the sauce and evenly coat the noodles. (Time: 3 minutes)

06

Step
2 mins

Garnish and Serve: Transfer the noodles to serving bowls. Top with matchstick cucumber, the remaining 1/4 cup of scallions, and toasted sesame seeds. Drizzle with toasted sesame oil for added richness and aroma. Serve warm with lime wedges on the side. (Time: 2 minutes)

For a spicier kick, add a pinch of red pepper flakes to the sauce.
If you don't have maple syrup, honey or agave nectar can be used as a substitute.
Feel free to add other vegetables like bell peppers, mushrooms, or carrots to the kale mixture.
Toasted sesame seeds add a nutty flavor, but you can also use other toppings like chopped peanuts or crispy fried onions.
The sauce can be made ahead of time and stored in the refrigerator for up to 3 days.
