Preheat your oven to 400 degrees F (205 degrees C). Shape the dough into 1/2-inch balls and arrange them on greased cookie sheets, ensuring a 2-inch space between each cookie. Gently flatten each ball using the bottom of a glass that has been lightly greased and then dipped into the powdered chocolate drink mix. (Time: 20 minutes)

Bake the cookies for 8 minutes. Immediately after removing them from the oven, gently flatten each cookie with the back of a spatula. Allow the cookies to cool on the baking sheets for 20 minutes. (Time: 28 minutes)

Prepare the filling: Soften the unflavored gelatin in 1/4 cup of cold water. Place the mixture in a heatproof cup within a simmering water bath until the gelatin is fully dissolved and clear. In a separate bowl, cream together the shortening, confectioners' sugar, and vanilla extract. Add the cooled gelatin mixture and beat for 10 minutes until light and fluffy. (Time: 20 minutes)

Once the cookies are completely cool, use approximately 1 tablespoon of filling to sandwich two cookies together. Gently press the cookies together to evenly distribute the filling. (Time: 15 minutes)

For a richer chocolate flavor, consider adding a teaspoon of espresso powder to the cookie dough.
Ensure the shortening is at room temperature for a smoother filling.
If the dough is too sticky, add a little more cake mix, one tablespoon at a time, until it reaches the desired consistency.
Store the finished cookies in an airtight container at room temperature for up to 3 days.
