Let the peas stand for 30 seconds, then drain and rinse them under cold water to stop the cooking process. (5 minutes)

Create the Glaze: Melt the butter in a large skillet over high heat until it begins to shimmer. Add the blanched peas, potatoes, broth, and salt to the skillet. Cook, stirring frequently, until the liquid reduces to a glossy glaze, about 5 to 7 minutes. Ensure the vegetables are evenly coated and slightly caramelized. (7 minutes)

Finish and Serve: Stir in the chopped fresh parsley and thinly sliced fresh mint just before serving. These herbs add a burst of freshness and aromatic complexity to the dish. Serve immediately. (1 minute)

For an extra touch of richness, try using brown butter in the glaze. Cook the butter until it turns a nutty brown color before adding the other ingredients.
If fresh peas are not available, frozen peas can be used. Simply thaw them before adding them to the skillet.
Adjust the amount of broth to achieve your desired glaze consistency. For a thicker glaze, use less broth; for a thinner glaze, use more.
