Follow The Directions

01

Step

Prepare the Asparagus: Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add asparagus, cover, and steam until crisp-tender (about 3 minutes). Drain and immediately rinse in ice-cold water to stop the cooking process, then drain thoroughly.

02

Step

Combine Salad Ingredients: In a large bowl, gently combine the steamed asparagus, cooked shrimp, cubed cucumber, chopped tomatoes, diced bell pepper, and thinly sliced basil.

03

Step

Prepare the Dressing: In a small bowl, whisk together the tomato juice, red wine vinegar, olive oil, minced garlic, white sugar, hot pepper sauce, salt, and pepper until well blended and emulsified.

04

Step

Dress the Salad: Pour the dressing over the shrimp and vegetable mixture in the large bowl. Toss gently to ensure all ingredients are evenly coated with the dressing.

05

Step

Serve: Divide the mixed salad greens among 4 individual plates. Top each bed of greens with approximately 2 cups of the Gazpacho Salad with Shrimp. Serve immediately or chill for later enjoyment.

For the best flavor, allow the salad to marinate in the dressing for at least 30 minutes before serving.
Feel free to adjust the amount of hot pepper sauce to suit your spice preference. A dash of smoked paprika can also add a lovely depth of flavor to the dressing.
If fresh basil is unavailable, dried basil can be used, but fresh is highly recommended for its vibrant aroma and taste.
Ensure the shrimp is fully cooked before adding to the salad. Overcooked shrimp can become rubbery.

Great recipe! I substituted the shrimp with grilled chicken for a non-seafood option and it was still fantastic.
