For an extra layer of flavor, try toasting the Arborio rice in a dry pan for a few minutes before adding the olive oil. Use homemade chicken broth for the best flavor, or enhance store-bought broth with a bay leaf and a few peppercorns. Don't overcook the shrimp! They should be pink and opaque, but still tender. A splash of dry white wine added after the onions soften can add a lovely depth of flavor to the risotto.
