For a smoother aioli, use a microplane to grate the garlic into a paste. If you don't have fresh lemon juice, bottled lemon juice can be used, but the flavor won't be as bright. Experiment with adding other herbs and spices, such as chopped parsley, chives, or a pinch of red pepper flakes.
