Follow The Directions

01

Step

Preheat oven to 400°F (200°C). Lightly grease baking sheets. (5 minutes)

02

Step

In a medium bowl, sift the flour. Cut in the chilled butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. (10 minutes)

03

Step

Stir in the granulated sugar and ground almonds. In a separate small bowl, lightly beat the egg. Add the egg to the flour mixture and mix until the dough just comes together. (5 minutes)

04

Step

Turn the dough out onto a lightly floured surface and knead gently until smooth. Roll out the dough to about 1/8-inch thickness. Use a 2-inch round cookie cutter to cut out cookies. Re-roll scraps and cut out more cookies until all the dough is used. Aim for an even number of cookies. (20 minutes)

05

Step

Place the cookie rounds on the prepared baking sheets. Bake for 10-12 minutes, or until the edges are lightly golden brown. (10-12 minutes)

06

Step

Let the cookies cool on the baking sheets for 3 minutes before transferring them to a wire rack to cool completely. (3 minutes)

07

Step

Once the cookies are completely cool, spread half of the cookies with a thin, even layer of your chosen fruit preserves. Top with the remaining cookies to create sandwich cookies. (15 minutes)

08

Step

Dust the tops of the sandwich cookies generously with confectioners' sugar before serving. (5 minutes)

For best results, use a high-quality fruit jam with a vibrant flavor.
Chilling the dough for 30 minutes before rolling it out can help prevent the cookies from spreading too much in the oven.
Experiment with different flavor combinations of jams and preserves to create your own signature sandwich cookies.
